Zucchini-Raisin Muffins Made in Silicone Muffin Cups ~ #bestsiliconebakingcups



I love to bake and one of my favorite things to bake are muffins. There are just so many kinds , flavors, sizes, well, just a lot of different ones to try.

I love these little baking cups. They are so easy to use, bright and colorful and so easy to clean up. Plus I am not throwing out paper wrappers every time I bake muffins for a gathering or special event.


Here's a yummy recipe for you using the baking cups.

Carrot-Raisin Muffins or Zucchini-Raisin Muffins 

½ cup brown sugar
¼ cup butter, softened
2 eggs
½ cup raisins
½ cup sour cream
½ cup vegetable oil
1 ½ cups flour
1 teaspoon baking soda
1 cup carrots or zucchini, shredded
½ cup unsweetened coconut, flaked (optional)
1 teaspoon cinnamon
½ teaspoon nutmeg

Preheat oven to 350°. In a large bowl, beat sugar and butter together until they are well mixed (about 2 minutes). Add sour cream, oil, and eggs. Beat egg mixture until it is well mixed. Stir in carrots, optional coconut, and raisins by hand. In a medium-sized bowl, stir together flour, baking soda, cinnamon, and nutmeg. Add flour mixture to sour cream mixture and stir to blend.


Spoon mixture into greased muffin tins, unless using silicone cups; no need to grease them. Bake for about 20 minutes, until slightly browned.


Optional: Make a loaf of bread instead. Follow the same recipe  only placing the dough in a greased and floured bread pan. Bake for 55-60 Minutes.

I love using silicone baking cups. Whatever I put in them comes out so easily, no sticking, no leaving small pieces behind, no need to run a knife around the edge to loosen. They are wonderful.
