Baking Fun With Lisa and Sunsella Silicone Baking Cups
Hi, it’s Lisa again to tell you about Sunsella Silicone Baking Cups.
These great regular sized cups come in a set of 12 bright, brilliant, and fun colors. I decided to try them out by making some cup cakes. They cooked the cupcakes evenly, but I had a little trouble getting them loose from the cups, and some of the cake stuck to the sides and bottom.
I think they would work better with muffins, rather than cupcakes because once the cupcakes are frosted it is nearly impossible to get the cupcake out without having a handful of frosting! It is also difficult to bend or peal the cupcake out of the silicone cups because they are much stiffer than paper cups. You also risk getting them thrown away!
I think these cup molds can be used for a variety of other uses and work great, such as corn muffins, mini quiche , brownies, ice cubes, ice cream cupcakes etc. And they sell for a really good price!

Baking With Silicone Baking Cups Saves Time and Money
Baking is something that is a part of how I like to make out home comfortable and soothing. I love to bake and I love making muffins pretty much more than anything. There are so many kinds and flavors.
I will admit though, that I do not like using paper liners because of the waste and I do not enjoy using non-stick sprays. They make a horrible mess of my pans. You can see that there are a ton of uses for silicone baking cups, way more than just muffins. That's what I like about them most. They do make great ice cubes that melt slowly and are perfect for ice cream cupcakes. Just decorate the tops with whipped cream and it looks like icing on top! It's a fun and creative dessert.
With the Brighids Kitchen I was not as happy with them as a few others I have tried. They are much thicker than others I have and I do like that because they do keep their shape better with heavy things served and fixed in them. But for muffins and cupcakes I had a little trouble with sticking, a lot more than I have had with other brands. I was super disappointed with that! Most silicone baking cups you can remove the item pretty quickly after they come out of the oven and there is little to no sticking. With the Brighids Kitchen silicone baking cups, you have to wait until the items are completely cooled and then slowly work around the cups to release what is inside them.
Were I had the best success is with making ice cubes and ice cream cupcakes. You soften the ice cream slightly, enough to be able to shape it some. Fill the silicone cups with the ice cream and freeze again. When they are frozen completely, wiggle the silicone (the same as you would with ice) and out pop the ice cream cupcakes. They look so cute on a small plate with whipped cream frosting and drizzles of chocolate or caramel. A very fun and special treat.
These are not the best silicone baking cups I have tried, but they are good.

I love these little baking cups. They are so easy to use, bright and colorful and so easy to clean up. Plus I am not throwing out paper wrappers every time I bake muffins for a gathering or special event.
Here's a yummy recipe for you using the baking cups.
Carrot-Raisin Muffins or Zucchini-Raisin Muffins
Carrot-Raisin Muffins or Zucchini-Raisin Muffins
½ cup brown sugar
¼ cup butter, softened
2 eggs
½ cup raisins
½ cup sour cream
½ cup vegetable oil
1 ½ cups flour
1 teaspoon baking soda
1 cup carrots or zucchini, shredded
½ cup unsweetened coconut, flaked (optional)
1 teaspoon cinnamon
½ teaspoon nutmeg
Preheat oven to 350°. In a large bowl, beat sugar and butter together until they are well mixed (about 2 minutes). Add sour cream, oil, and eggs. Beat egg mixture until it is well mixed. Stir in carrots, optional coconut, and raisins by hand. In a medium-sized bowl, stir together flour, baking soda, cinnamon, and nutmeg. Add flour mixture to sour cream mixture and stir to blend.
Spoon mixture into greased muffin tins, unless using silicone cups; no need to grease them. Bake for about 20 minutes, until slightly browned.
Optional: Make a loaf of bread instead. Follow the same recipe only placing the dough in a greased and floured bread pan. Bake for 55-60 Minutes.
My family loves these little muffins and bread!
