Have you ever wondered what the difference is in all those paprika's you see on the shelves in the store. Does it really make a difference what kind you use when a recipe calls for it?
Yes! I've wondered what the difference was and I have learned it does make a difference in what kind you use in your recipes.
Paprika is made from grinding dried peppers, so just like peppers can range from sweet to mild to red hot, so can paprika. Paprika is sometimes a garnish, as you might see it sprinkled on deviled eggs or garlic bread, but in Hungarian and Spanish cooking, it is an ingredient used to really flavor dishes and play a larger role.
Most of the time you hear about Hungarian paprika. I know growing up that was all my Mom used. Hungarian paprika is actually a sweet mild paprika, which is what most of us in the US are familiar with.
Kiva offers two really nice varieties of paprika, Hot Smoked Spanish Paprika and Sweet Smoked Spanish Paprika. Both of these are full of wonderful flavor! My family has become fond of the Hot Smoked since they like their food to have a bit more of a kick to it.
The favorite way we like to use the paprika is to season our pork chops. Here's the recipe for my families favorite way to have chops!
Glazed Pork Chops
Ingredients:
4-6 thick cut boneless pork chops
½ tsp garlic powder
¼ cup brown sugar
½ tsp cayenne powder
1 tsp hot smoked paprika
½ tsp black pepper
½ tsp salt
Instructions:
Preheat your oven to 350 degrees. In a bowl combine the brown sugar and spices. Remove the pork chops from their package and rub the brown sugar/spice mix all over both sides. Use all of the spice mix. Heat 2 Tbsp of olive oil in a skillet over medium/high heat. When the oil is nice and hot (it will look wavy in the pan), add the pork chops. Cook the chops for about 5 minutes on each side or until they are nicely browned. If you are using an oven safe skillet, place the skillet in the oven for an additional 5 minutes to make sure they are cooked through. If your skillet is not oven safe, transfer the chops to a baking sheet lined with foil then place in the oven. Remove the chops from the oven and enjoy!
